his history

♘ chapter one.

the bell rang, loud and clear and per usual, the class left their seats the moment the first twinkles even resonated against the walls of chunga high. haon sighed, beginning to pack his bag. it had been an okay day, the bothering and bullying somewhat calm unusually so— but truth be told, he would take any ounce of peace when it came.

he had begun looking forward to a relaxed afternoon, one where he got to call his mum and tell her about everything and anything. he missed home, the salty air of busan and the people there. but most importantly though, he missed his mother's cooking. the thought of warm rice topped with fish and kimchi was enough to bring a smile to his face, distracted as he tugged onto the strap of his bag, making his way out of the classroom. 

Except he didn't get far. or couldn't, for that matter. 

the putrid stench of strawberry milk filled his nose, the cold and sticky liquid staining his clothes and skin of his face and hands. even the thick glasses he wore was covered in the thick liquid, the front of his hair sticking in a damp mess to his forehead. 

laughter twinkled and picked up an echo against the walls of the school and he knew immediately who it was. or rather, the group who took it upon themselves to make his life miserable. HE DIDN'T NEED TO LIFT HIS HEAD TO KNOW HIS bullies, their FACES ETCHED WITH VILE SNICKERS ENGRAVED INTO HIS MIND FROM THE MOMENT HE STEPPED INTO CHUNGA HIGH. 

HIS FISTS CLENCHED INTO FISTS, HOLDING BACK THE ANGER THAT SURGED THROUGH HIM. HE WOULDN'T ACT NOW. IT WOULDN'T BE JUSTICE SERVED. AFTER ALL, JUSTICE'S SISTER REVENGE WAS COLD LIKE THE WINTRY DECEMBER AFTERNOON OF THAT PARTICULAR FRIDAY. 

 

♘ chapter TWO. 

GOD, HE WAS TIRED OF POTATOES AND CHEESE, HAON THOUGHT TO HIMSELF AS HE STARED AT HIS DINNER. IT WAS HIS SECOND YEAR INTO THE SWISS CULINARY ARTS ACADEMY AND STILL, HIS STOMACH COULD NOT HANDLE THE BLANDNESS OF IT JUST SALT AND PEPPER, THE OCCASIONAL LEMON WEDGE EVEN WORSE. 

his classmates had always laughed at how he'd craved something spicier but it was in good mirth; he'd managed to introduce them to food he knew, food that was actually delicious to eat past the fear of foreign foods. and he had done a splendid job at getting his friends to try some kimchi with their fillet mignon. they called it HAUTE CUISINE ASIATIC BUT TO HAON, HE WAS JUST PROUD TO SHOW OFF WHAT HE'D GROWN UP EATING. 

ALBEIT WITH FINISHES OF CAVIAR AND TRUFFLES. 

EVEN HIS PROFESSORS HAD BEEN moved by his attempts at combining french fine dining with korean flavors but his challenge had always been one thing: how was he supposed to make food he loved when the methods he had learned all felt wrong? so it took it upon himself to do just what felt right: he cooked to his heart's content using a combination of french and traditional cooking methods, palating korean cuisine for the rich and upper class. 

his experiments proved to be fruitful. graduating with flying colors put him at the forefront of apprenticeship. 

first step was london, at the dorchester by alain ducasse. apprenticing at the three-michelin star contemporary restaurant opened his eyes to the wonder of what it was to have one's own restaurant. and his journey, ambitiously so, began. 

a year and eight months later, he found himself at the doorstep of his idol's restaurant; marco pierre white was the enfant-terrible of the culinary world and haon aspired to be just that. someone who revolutionarized food. he went from peeling potatoes, trimming fish and the occasional sweep of the floor to being a junior chef, able to assist in menu development and so on. marco's steakhouse and bar & grill was notoriously famous for having a set standard, in both quality and prowess. it was in the center of london, right at the eye for everyone to come and indulge what the house had to offer. 

and haon put his all into his work, soon enough standing out as an adept chef and more so, a leader in the kitchen when the executive chef was absent. 

he was a strange lad too, one who worked resiliently and it was clear to marco himself. haon was soon promoted as sous-chef, at the ripe age of twenty-five. he was quite young but he had the world ahead of him.

 

♘ chapter Three.

marco pierre white knew of haon's ambitions; it was clear the young lad wasn't meant to simply stay in the limelight forever. so with heavy encouragements, he pushed haon to open his own restaurant, a small business seating merely fifty people at first. 

it was strange, to run a whole kitchen by himself but it was even more bizarre for people to buzz about his food as good as it felt. people raved about his menu, about the life he brought into the common steak-fish-and-chips city of london. he boasted the title of 'new promising chef' proudly and it was that same fire that he'd first started with that allowed him to open three more restaurants around the world from newyork to shanghai until finally settling at home. 

korea would always be home and his mum had always made sure that her son would return one day. and he did, settling down in seoul for now amidst the buzz his arrival had caused. 

'sonamu, one of asia's top 50 restaurants and chef yoo haon, the proud holder of three-michelin stars!' 

ah, so this is what success felt like. it was sweet but what was even better was still on it's way. 

 

♘ timeline. 

❛july, 2020❜ — he's made his way to seoul after a few long years abroad. while supervising the construction of sonamu seoul, he lived in the carlton in gangnam while still pondering what would be a good space for him to make a permanent home. 

 ❛december, 2020❜ —establishing sonamu seoul has been hectic, especially when he needed to make sure that it was rooted as one of the best restaurants in town. finally satisfied with work, he decides to reside in the perseus, making 9001 his. alas, duty calls which means he's flown back and forth from seoul to other locations far too much to have settled completely.
