Evan never tasted human blood, as far as he remembered, he would only survive on blood from animals, or even other vampires because he has taught himself to control his body and his needs long enough to survive much longer without human blood or any blood longer than any other vampire. 

His eyes are actually silver white colored but he puts  eye contact lenses ever since they were invented and he is for once thankful for humans for making something so useful for him in order to blend in with others. Before then he had pretended to be blind for centuries, first he covered them with a blindfold then he started covering them using dark sun glasses but now he can just walk around not minding however others look at him. 

As a heart surgeon, Evan is used to work for hours while listening to classical music. It is another thing he thanks humand for. If he could,  he would have turned all the great musicians and composers into vampires just to make them make music forever. 

Tampering with life in the palms of his hands is his sole satisfaction in this eternal life.
