Q: Because humans are harvested at 18, does that mean my character can't be older than 18?

A: No, humans simply start having blood drawn from them at 18. Vampires chose this age since human bodies are almost completely matured at that general age. Humans can go on to live very long lives in an orphanage, if they are not purchased in an auction or relegated to a farm (and as a gentle reminder, the farm section of the rp is yet to be unlocked).

A: No. Vampires are made, not bred, so they are created in the image of the coven leader who turns them.
